Uji matcha in paste form — holds its green through baking and hot holding. No added color. No sifting, no separate slurry, no whisking.

Dry matcha can lose its bright green under prolonged heat. The color goes dull in the oven and flat under extended hot holding, and in commercial baking and production, added color is sometimes used to compensate. This paste is made to carry its color through that heat with no added colorant of any kind.

The stability comes from how it is made. Uji matcha is softened, milled, blended with water, then heat-concentrated into a paste and sterilized. That process sets the natural color, so the green holds through the heat applied later. No colorant, no emulsifier, no preservative. Vegan.

In production the paste removes steps. There is no sifting and no separate slurry to make — it blends directly into batter, cream, custard, or liquid, and the dose stays consistent batch to batch, which dry powder rarely manages once static and clumping enter the picture.

It is stable in storage as well. Filled hot and sterilized in the sealed pouch, it ships and holds at room temperature unopened; refrigeration is recommended once opened, since matcha loses color and aroma faster after exposure to air. Color resists light, and component degradation is minimal.

Dose by weight against the finished batch rather than by scoop. It is not a one-for-one swap for dry powder, so run a small test batch first and adjust to the color and flavor you want in the finished product.

#Application by dish
・**Sponge, financier, and cookies:** fold into the batter with the wet ingredients, then bake as normal — the green holds through the bake, so no colorant is needed to keep the crumb bright
・**Sealed and shelf-stable formats:** the paste itself is hot-filled and sterilized during manufacture. For use in sealed or shelf-stable products, validate color performance and all processing requirements in your own formulation and process before scaling.
・**Pastry cream and custard:** whisk into the warm base off the boil, then cook out as usual
・**Ice cream and gelato:** blend into the base before churning, which disperses fully and avoids the gritty specks of under-hydrated powder
・**Ganache and buttercream:** mix into softened butter or melted white chocolate first, then build the emulsion — no separate hydration step
・**Latte and iced matcha:** loosen with a little liquid, then build with hot or cold milk; no whisk and no sifter needed at the bar
・**Beurre blanc and cream sauces:** whisk in at the finish for color and a clean bitter edge that cuts the butter
・**Nama chocolate and mochi:** work into the fat- or sugar-based mass directly; the vegetal bitterness carries through the sweetness
・**Monaka and wagashi fillings:** fold through the bean paste to color and season it without requiring a separate slurry
・**Salt blends and seasoning pastes:** combine with salt, oil, or miso for a matcha component that mixes in evenly

**Best before:** 12 months from production date. Filled hot and sterilized at 90°C or above; shelf stability comes from the process, not from preservatives.

White crystals may form on the surface with changes in temperature — these are natural mineral deposits from the tea and do not affect quality. Stir them back in before use.

#Why does matcha usually turn brown when baked, and how does this paste hold its color?
The green in matcha comes from chlorophyll, which loses its magnesium under heat and converts to a dull olive-brown compound. This paste is heat-concentrated and sterilized during manufacture, which sets the color before it reaches your kitchen, so it holds through baking and extended hot holding without a colorant.

#Can I substitute this paste for matcha powder in an existing recipe?
It is not a one-for-one swap by weight, because the paste is hydrated and dry powder is not. Run a small test batch and adjust to the color and flavor you want in the finished product. You can drop the sifting and slurry steps the recipe calls for.

#Is this ceremonial grade or culinary grade?
Neither term applies cleanly. Those grades describe dry powder sold for whisking or baking. This is Uji matcha processed into a paste for kitchen and production use, so it is judged on color stability, dispersion, and flavor in the finished product rather than on a powder grading scale.

#Does it need refrigeration?
Not before opening. It is filled hot and sterilized in a sealed pouch, so it ships and stores at room temperature. Refrigeration is recommended after opening, because matcha loses color and aroma faster once exposed to air.

#Why is there a California Proposition 65 warning on a green tea product?
Tea plants take up trace lead from soil, so green tea products sold in California commonly carry this notice. It reflects California's disclosure threshold rather than a defect in the product. The paste is water and matcha, with no colorant or preservative added.
