Crafted from Japanese-sourced rice polished to 50%, this pure rice vinegar is produced by a maker with over 145 years of history. Following the belief that "vinegar making begins with sake brewing," every step—rice polishing, koji preparation, and sake brewing—is handled in-house, ensuring unparalleled quality. Slowly fermented at low temperatures with Junmai Daiginjo sake mash, the vinegar develops a delicate, clear flavor.
