What is Koji?
Koji is a living mold (Aspergillus oryzae) long used in Japan. It transforms rice starch into sugars and amino acids to unlock umami and natural sweetness from grains. It’s the essential kickstarter for beloved fermented foods like miso, soy sauce, amazake, and mirin.
