Hanakatsuo is thin, feather-light shavings of katsuobushi or bonito that has been simmered, smoked, dried and aged for umami. It's the foundation for authentic dashi and one of the most essential building blocks of Japanese cuisine. Light, soft, and delicately smoky, these classic flakes add depth to broths while also elevating dishes as a finishing touch.

How to make authentic Japanese Dashi
Step 1: Heat 1.8L of water until just before boiling.
Step 2: Turn off the heat and add 1.8 oz (50g) of Hanakatsuo.
Step 3: Let it steep gently for about 1 min.
Step 4: Strain carefully to keep the broth clear.

Store in a cool dark place away from direct sunlight.
