Bafun Uni Powder is the dehydrated powder version of Shio Uni — aged, salted Bafun Uni (sea urchin) roe. Considered one of Japan’s “Three Great Delicacies,” Shio Uni has been prized for 200 years and was once served only to nobility.
To produce just 100g, over 100 Bafun Uni are harvested, only during a short summer season. Then they’re cleaned, salted, and matured right after harvest to preserve freshness. Blending artisans known as “blenders,” evaluate the unique flavor profiles of Bafun Uni from different coasts and balance their aging time to create just the right concentration of umami.
This powdered version packs all that umami into a versatile format. A pinch goes a long way. Sprinkle it over hot rice and the steam brings the aroma right to life.
