Shredded Ma-Kombu (Dried Young Kelp from Hakodate, Large Sheets)

Crafted from Ma Kombu harvested in Hakodate, Hokkaido, these early-harvest blades are pulled at less than half their typical growing cycle, when the kelp is exceptionally tender. The kombu is gently boiled, thinly sliced, and dried into delicate sheets. When rehydrated, it expands up to 20 times in volume, separating into supple strands that deliver clean, understated umami. Rehydrate and fold into pasta or composed salads for subtle marine depth and texture. Cut into small pieces and fry briefly for a crisp, edible garnish. Highly versatile in both refined and rustic applications.

Rehydrate to fold into pasta or salads. One sheet expands up to 20 times in volume when rehydrated. You can also add it into soups and broths as is, or cut the sheet into small pieces and fry for edible garnish.

*Soak for 3–5 min for a firmer texture, and 10 min for a softer texture.
