Shirataki, meaning “white waterfall” in Japanese, is a noodle made from konjac flour and dried for a longer shelf life. These noodles absorb flavors, and handle long simmers while maintaining “chew,” making them an excellent addition to sauces, broth and stir fries. The silky texture of Shirataki also pairs well with cold dishes, and as a naturally low-carb, low-calorie and fiber-rich noodle they’re a healthy alternative to pasta.
